Hold the meat and dairy please…

So tonight was our second ‘vegan’ dinner. Not consecutively, our first one was 2 weeks ago. I tried a sweet potato white bean burger crusted with Panko bread crumbs, served with sliced avocado on top. Al and I loved it. S ate some and B ate all the bread and the Panko crust.

Tonight we had a red cabbage slaw with a tahini dressing (found the recipe on pinterest) and also had some marinated/grilled tofu. It was a success! I also made chicken skewers for the kid’s just in case! S said the tofu tasted like scrambled eggs. I marinated it in a sesame oil/soy sauce mix for a little extra flavor. Even my little guy liked it!

We have two more dinners planned this week that will be vegan as well.

Eventually we’ll make the switch, just not all at once. Such a big change!
